Beef and Cabbage Stir Fry

This dish is about as quick and easy as they get, and can be made up from the most basic items. No fancy ingredients are required, unless you think of balsamic vinegar as exotic. The bits –  the sauce mix, the vegetables, and the meat – can all be made up and kept in the fridge, and it takes about as long to put together as it takes the noodles to cook. Good Friday night stuff. Serves two.

Ingredients.

¼ cup peanut butter.

½ cup orange juice.

2 tablespoons soy sauce.

1 tablespoon balsamic vinegar.

1 tablespoon sugar.

1 tablespoon cornflour.

2 cups thinly sliced cabbage.

1 carrot, grated.

½ cup sliced green beans.

1 spring onion, sliced.

¼ cup cooking oil.

Salted water.

Egg noodles.

250g thinly sliced lean beef.

2 cloves garlic, chopped.

Sesame oil.

Method.

Mix the peanut butter, orange juice, soy sauce, vinegar, sugar and cornflour together in a container and top up with water to the volume of one cup. Mix thoroughly and set aside. Prepare the vegetables and set aside.

Put the noodles in boiling salted water and cook for the required time. Meanwhile, heat the oil in a sauté pan over a hot flame. Stir fry the meat until well browned and the liquid has begun to render. Add the garlic and stir fry for another minute or so. Add the vegetables, and chow around for another two or three minutes. Add the sauce mix and stir through thoroughly until beginning to bubble.

Drain the noodles and place into two deep plates. Drizzle with a little sesame oil and top with the beef mixture. Serve immediately.
