Roast Beef and Pasta Pie

Or roast pork and pasta, or roast chicken and pasta, or any old cold meat that is available, in fact. This is a good way of using up left-overs – if you actually have such a thing – and is besides a quick and easy meal.

 

Ingredients.

2 cups macaroni.

A little olive oil.

1 medium onion, peeled and chopped.

2 cups diced cold roast beef [or whatever].

2 tblsp tomato paste.

½ cup marsala [or madeira or sherry].

1 ½ cups cheese sauce.

 

Method.

Preheat the oven to 180°C. Bring a pot of salted water to the boil and place the macaroni in it. Cook to your taste according to the recommendations on the packet. Meanwhile, heat a little olive oil in a sauté pan over a hot flame. Sauté the onion until soft and add the diced meat. Stir together, then add the tomato paste and the marsala. Bring to the boil and simmer, stirring frequently, until the liquor has reduced by half. Pour the mixture into a small baking dish, smoothing with a spatula to ensure that it is evenly spread.

Prepare the cheese sauce [if you do not know how, see under ‘sauces’ below]. Drain the pasta and stir into the cheese sauce, mixing thoroughly. Spoon over the meat mixture, again smoothing to ensure that it is evenly spread, and place in the oven. Bake for 30 minutes and serve with a green salad.
