Savoury Mince

Savoury Mince is one of the basic recipes of all time, providing nourishment for recently-left-home young people for generations. Everyone has heard of it, almost everyone has cooked it at some time or another, with varying rates of success, and it can include just about anything in the ingredients list. It is quick and easy, and is ideal for using up those little pots of this and that that start to clutter up the refrigerator and need to be used up before they start to evolve into little ecosystems all of their own. The recipe below is little more than a suggestion as far as the ingredients are concerned, but when it comes to the basic principle behind it you will find that it is invaluable.

1 tsp ground cumin.
1/2 tsp ground ginger.
1/2 tsp ground coriander.
1/4 tsp white pepper.
Salt to taste .
250g beef mince.
2 tblsp tomato paste.
1 tblsp balsamic vinegar.
1 tblsp dark soy sauce.
1 1/2 cups beef stock.
2 tblsp cooking oil.
1 medium onion, peeled and diced.
2 tblsp plain flour.
1 1/2 cups mixed frozen vegetables.

Mix the spices together and mash into the minced meat until evenly spread through. Cover and set aside for a couple of hours. Mix the tomato paste, vinegar, soy sauce and beef stock together and set aside.
Heat the oil in a sauté pan over a hot flame and brown the meat all over. Add the onion and continue to cook, stirring frequently, until the onion is soft and translucent. Stir the flour through until you cannot see any white then add the stock mixture. Stir though well until the mixture bubbles and thickens. Stir the vegetables through.
Cover, reduce the heat to a simmer and allow to cook for thirty minutes. Stir once or twice during that time then serve on toast, fried potatoes, boiled potatoes, mashed potatoes, rice, pasta, noodles or whatever takes your fancy.
