Chicken Mains.

One of the most common of meats nowadays, it was not that long ago that chicken was a luxury. When I was a child, a roast chicken was a very special treat that we enjoyed perhaps three or four times a year. At that time, also, roast chicken was about the only way that it was eaten in the West. Today, thanks to to widespread poultry farming, it is cheap and readily available in a number of different cuts, and it prepared in a multitude of different ways.

A word of caution, however. Chicken meat is very susceptible to diseases such as hepatitis and salmonella, but such things are quickly neutralised with proper cooking methods. When handling chicken meat or chicken products, rigourous attention to hygeine is essential.
