Pancit Canton

Pancit is simply the Filipino word for noodles, and the range of possible ingredients for this and the many similar dishes must run into the hundreds. This is a very simple version of a recipe that came with a pack of “Monika” brand egg noodles. Quite good, and very quick.



½ cup olive oil.

250g diced lean chicken meat.

1 medium onion, peeled and chopped

4 cloves garlic, peeled and chopped

½ teaspoon crushed ginger.

100g peeled and cooked shrimps.

1 ½ cups chicken stock.

2 tsp Thai fish sauce.

1 tblsp sweet chilli sauce.

Salt to taste.

2 cups chopped vegetables, e.g. peppers, cauli florets, broccoli florets, celery, peas etc.

½ cup chopped coriander leaves.

2 skeins thin egg noodles.



Heat the oil in a pan over a hot flame and sauté the chicken meat until cooked through. Add the onion, garlic and ginger and sauté until the onion is soft. Add the shrimps, the stock, fish sauce, chilli sauce, salt and vegetables. Stir well and bring to the boil. Break up the skeins of noodles and add to the mixture, cooking for about five minutes. Serve immediately.
