Simple to make, very healthy [bran is excellent for the bowels], very tasty, and they freeze well so you can make up a batch, pop them in a bag in the freezer, and thaw them out as you need them.
Ingredients.
25g butter.
1 tblsp golden syrup.
½ cup sultanas.
1 cup hygrade flour.
1 tsp baking powder.
1 tsp baking soda.
¼ tsp salt.
1/3 cup sugar.
1 cup bran flakes.
¾ cup milk.
1 egg.
Method.
Preheat the oven to 180°C. Melt the butter, syrup and sultanas together on low heat. In a separate bowl, sift together the flour, baking powder, baking soda and salt. Stir the sugar and bran into the flour mixture.
In a separate bowl, beat the egg and the milk together. Stir the two liquids into the dry mixture until evenly constituted. Spoon into a greased muffin tray [or, even better, silicone patty pans if you have them]. Bake for 20 minutes. Remove from the oven and cover with a cloth until cool.
