Chocolate Chip Cookies.

These simple cookies form one of the mainstays of the biscuit tin. Using the basic recipe, you can try all sorts of variations, using, for example, chopped walnuts instead of chocolate chips. Other possibilities are chopped cashews, flaked almonds, diced dried apricots, pistachios, or any of a wide range of taste treats. Chopped glacé cherries give a delicious Black Forest flavour.

Ingredients.

125g butter.

½ cup brown sugar.

½ cup caster sugar.

½ tsp vanilla essence.

1 egg.

1 ¾ cups hygrade flour.

2 tsp baking powder.

½ tsp salt.

1 tsp cocoa.

1 cup chocolate chips.

Method.

Place the butter in a large bowl and soften in the microwave for 30 seconds. Cream the butter, sugars and vanilla. Lightly beat the egg in a separate bowl and beat into the butter mixture. Mix in the flour, baking powder, salt and cocoa. Mix well to an even consistency. Add the chocolate chips and mix in well.

Using wet fingers, form the mixture into walnut size balls and flatten onto a greased baking tray. Place in a pre-heated oven and bake for 10 minutes at 200°C.

Yields: 36-40.
