Offal Mains.

Delicious, nutricious, and endlessly versatile. There is almost no end to the things that you can do with chicken livers, for example, and everything that can be done with chicken livers can be done with lambs’ kidneys.  And offal is cheap, here, anyway. Thankfully, New Zealanders still think of offal largely in terms of pet food, which has kept prices down. Perhaps I should not publish these recipes; someone might discover them and spread the word, raising demand, which would raise prices.
