Gado-gado dressing

Gado-Gado salad is a popular Indonesian dish made up of a mixture of steamed or parboiled ingredients and sometimes with raw ingredients thrown in, which, obviously, allows for a vast assortment of variations. Hard boiled eggs are common, and it is served with a distinctive sauce, which, again, has a huge range of variants. This is but one.


1 small [165 ml] tin coconut milk.

½ cup crunchy peanut butter.

2 tsp Thai fish sauce.

1 tblsp Thai sweet chilli sauce.

1 tablespoon brown sugar.

Squeeze of lemon juice.


Place all the ingredients in a small bowl, microwave on high for one minute, beat well and allow to cool.

Yield: About 1 cup.
