Green Goddess Dressing

Something light and delicate, ideal with seafood salads. There are any number of variations on this theme, which has been around since at least the 17th Century, and many later ones include avocado, tarragon vinegar and/or Worcestershire sauce.



½ cup salad dressing.

½ cup fresh cream.

1 teaspoon anchovy paste.

1 cup chopped mixed herbs, particularly tarragon and chives.



Beat together or blend and refrigerate before use.
