Guacamole is an avocado based dressing for salads and mixtures such as Chilli Con Carne and Mole Beef. The word derives from the Nahuatl language of the Aztec Indians of what is now Mexico, from the words ahuacatl, an avocado, and molli, meaning a mixture or sauce. It is the ideal accompaniment to any Mexican dish, or indeed any spicy dish.



Pulp of 2 avocados.

½ cup finely chopped onion.

¼ cu finely chopped coriander greens.

2 ripe tomatoes, chopped.

Dash cayenne pepper to taste.

Salt to taste.



Place all the ingredients together in a bowl and mix well. For a chunky mixture, that is all it takes. For a smooth mixture, smash through a mouli or zap with a kitchen wand. Cover and leave aside for 1 hour to allow the flavours to combine.


Yield: About 2 cups [depending on the size of the avocados].
