Lemon Curd.

Perhaps one of the most exquisite taste treats of all time, Lemon Curd is a delight on any occasion, warm or cold. Delicious on crackers or toast.

Ingredients.

100g unsalted softened butter.

1 cup caster sugar.

2 eggs.

2 egg yolks.

2/3 cup fresh lemon juice.

1 tsp lemon zest [optional].

Method.

In a bowl, beat the butter and sugar together until fully combined. Slowly add the eggs and egg yolks, beating as you go. Beat in the lemon juice. Pour the mixture into a small saucepan and heat gently, stirring until smooth [a balloon whisk is ideal for this].

Increase the heat to medium and cook, stirring constantly [a wooden spoon is ideal for this part], until the mixture has thickened. Do not boil. Stir in the zest, pour into a jar or bowl, cover and keep in the refrigerator.

Yield: 2 cups.
