Madeira Herbed Gravy


1 cup chicken stock.

Salt and pepper to taste.

½ cup Madeira wine.

3 tblsp plain flour.

1 small spring onion, finely chopped.

2 sprigs thyme, stripped.

2 tsp parsley, finely chopped.



Bring the stock to the boil and add the salt and pepper. Beat the flour into the wine and slowly pour the mixture into the stock, beating as you go, until the mixture thickens. Reduce the heat to a simmer and gently cook for 10 minutes. Put the herbs in a sauce jug and pour the gravy over them. Cover with cling film and allow to stand for an hour our so. Reheat in the microwave when ready and serve immediately.
