Miso Cashew Dressing.

This concoction can be used both as a condiment or as a dressing. It can be added to pasta or rice, steamed or stir fried vegetables, and soups and stews. It also makes an intriguing dressing for green salads.


1 tblsp miso paste.

½ cup chopped cashews.

½ cup sesame oil.

½ cup olive oil.

1 tblsp honey.

2 tblsp balsamic vinegar


Place all the ingredients in a small bowl and blend with a kitchen whiz into a smooth texture; by varying the amount of oil you can regulate the consistency to suit your requirements. Place in an airtight container in a cool place and leave for at least four hours for the tastes to combine properly.
