Nam Jim Sauce.

Nam Jim is a Thai salad dressing and is an ideal compliment to any seafood or grilled beef. The quantities given below are indicative only, all of them being strong flavours in their own right. You might want more or less of each, so keep experimenting until you find the balance that is right for you.


1 chilli, seeded and chopped.

½ red onion, chopped.

1 clove garlic, crushed.

Juice of a lime.

2 tblsp palm sugar*.

2 tsp fish sauce.

Salt to taste.

¼ cup olive oil.


Place all the ingredients in a small bowl and mix well. Run through a kitchen mouli or zap with a kitchen wand until smooth [more or less]. Place in an airtight container and leave in a cool place for 3-4 hours to allow the flavours to combine.

Yield: About 1 cup.

*. Or brown or raw sugar.
