Walnut Sauce [Bazha].

Also known by the Farsi term Bazha, this Walnut dip/sauce is a popular condiment in Iranian cuisine. It is delicious added into stir fries  or stews, as, for example ‘Pork with Walnuts’ [see under Pork Mains], or simply eaten as a dip with crackers or croutons. Try it in a sandwich, spread on bread with a little cheese and chopped lettuce. Go easy: a little bit goes a long way.


1 cup shelled walnuts.

1 small onion, diced.

1 clove garlic.

1 tblsp pomegranate molasses.

Dash cayenne.

½ tsp turmeric.

½ tspn fenugreek.

¼ cup olive oil.



Pound or zap with a kitchen wand into a paste. Place in an airtight container and leave for at least six hours before use to allow the tastes to integrate and mature.
