Sausage and Bean Casserole

This is another one that has been sitting in the folder for years, so I have no idea where it came from but it is not particularly original. That is as may be, but it has the virtues of being something simple, cheap and warming for a cold winter’s night. I used a can of kidney beans, but cannellini beans, navy beans, black beans or chick ppeas would work just as well.

 

Ingredients.

2 tablespoons cooking oil.

2 onions, peeled and chopped.

Salt to taste.

2 tsp curry powder or to taste.

1 440g can diced tomatoes.

2 tsp balsamic vinegar.

¼ cup tomato paste.

4 beef sausages.

 

Method.

Preheat the oven to 180°C. Heat the oil in a frying pan and fry the onions until soft. Add the curry powder, stir and cook for another 2-3 minutes. Add a the beans, the tomato, vinegar and tomato paste and bring to the boil, stirring to ensure that all is fully combined. Place the sausages

 

Serve with: Roast vegetables.

 

Serves: 2.
