Sausage and Broccoli Pasta

This one is only very remotely related to an Italian original, which uses [naturally] Italian sausages, not pork ones. Nevertheless it is fast, easy, tasty and filling. And cheap, which is always a bonus.

Ingredients.

Salted water.

2 cups dried pasta.

¼ cup olive oil.

3 pork sausages.

4 cloves garlic, chopped.

1 onion, chopped.

Dash cayenne pepper.

The florets from one large broccoli.

½ cup chopped Italian parsley.

½ red capsicum, diced.

2 eggs.

Method.

Parboil the sausages, skin them and chop them into medallions about 10cm thick. Bring the salted water to the boil and add the pasta. Cook for 8-10 minutes depending on taste. Meanwhile, heat the oil in a deep pan over a hot flame and fry the sausage medallions until well browned. Add the onion, garlic and cayenne and stir fry until the onions are soft.

Add the rest of the vegetables and stir fry until soft. Add the pasta to the pan, reserving the salted water. Stir the pasta through until everything is well mixed then remove from the heat. Beat the eggs and very quickly stir them through the mixture. Add a couple of spoons of the hot brine to the pan to thin the sauce a little and serve immediately.
