Toad in the Hole

One of the classics of English cuisine, quick, easy and cheap. What more is there to say?



¾ cup plain flour.

Salt and pepper to taste.

1 teaspoon baking powder.

1 egg.

1 cup milk.

6 beef sausages.

1 tablespoon lard.



Prepare the batter first. Mix the ingredients together and whisk until evenly constituted. Set to one side. Heat the oven to 220°C. Put the lard in a small casserole dish and place in the oven for three minutes. Remove and add the sausages to the casserole, turning in the hot fat. Place in the oven uncovered and bake for ten minutes. Remove, whisk the batter and pour over the sausages. Replace in the oven and bake uncovered for thirty minutes.


Serve with: Hot tomato sauce [pasta sauce], garlic cabbage and green beans. Or, Madeira gravy and braised cabbage.


Serves: 2.
