Hearty Winter Soup.

This soup is made up of things that most people would have in the larder, or at least things that are readily available. Remember to be generous with the pepper: pepper is the heart of the winter warmer.

10 cups beef stock.

1 large onion, peeled and diced.

1 celery stick, diced.

Freshly ground black pepper.

Salt to taste.

¾ cup pearl barley.

½ cup split peas.

1 cup kidney or lima beans.

2 cups chorizo, frankfurter or Kransky chopped into medallions.

½ cup frozen sweet corn.

Place all the ingredients in a large saucepan and bring to the boil, stirring from time to time. Reduce the heat to a simmer, cover and cook for 1 hour, stirring from time to time to prevent catching. Remove from the heat and allow to sit for at least 2-3 hours then gently reheat.

Yields: 10-12 servings.
