Spicy Cauli and Walnut Pasta

Spicy Cauliflower Pasta with Walnuts is a favourite in our household because we have a walnut tree that provides huge quantities of the basic ingredient. It is also cheap, tasty, and filling.


1 ½ cups cauliflower florets.

200g fresh pasta.

½ cup olive oil.

¼ cup chopped walnuts.

½ cup diced red capsicum*.

¼ cup chopped celery leaves**.

2 cloves garlic, crushed.

Dash cayenne.

2 eggs, well beaten.

Parmesan cheese to garnish.


Heat the oil in a sauté pan and chow the walnuts, capsicum, coriander, garlic and cayenne. Meanwhile, blanch the cauliflower for two minutes in a saucepan of boiling salted water. Add the cauliflower to the walnut mix and chow thoroughly. Meanwhile, add the pasta to the water.

Continue to chow the cauliflower mixture until the pasta is cooked. If necessary, reduce heat under the cauliflower mixture to a minimum until the pasta is done to taste, then add the pasta to the cauliflower mixture heat. Stir through.

Remove from the heat and add the eggs, mixing quickly and thoroughly, adding a little of the salted pasta water to the mix to thin the sauce as required. Serve with parmesan on the side.

* If no capsicum, try finely chopped dried tomatoes.

** Or a mixture of herbs e.g. celery leaves, coriander, and/or Italian parsley.
