A stable of western cuisine since mammoth went off the menu, roast beef  is the mainstay of British cooking. It also features in a whole range of classic French dishes such as Boeuf Borguinonne and Boeuf en Daube. Rich, nourishing and endlessly versatile, it is well worth cultivating a knowledge of the very large variety of cuts that are available to understand what can be quickly grilled as opposed to what has to be slowly stewed.
