French Onion Soup.

Without a doubt Soupe Aignon is one of the best known and possibly the most tasty soups of the western world. Light and delicious, it is a classic of French cuisine, yet like all the best things, it is very simple to make.

Ingredients.

50g butter.

5 medium onions, peeled and chopped.

3 dessertspoons crushed garlic.

1 teaspoon cracked pepper.

Salt to taste.

5 good cups beef stock.

3 cups croutons.

1 ½ cups grated cheese.

Method.

Melt the butter in a large [2l] pot and cook the onion until well browned. Add the garlic and pepper, stir through and cook for another two minutes. Add salt and the stock, bring to the boil, reduce heat, cover and simmer for twenty minutes.

Preheat the grille to 200°C. Pour the soup into six bowls, float ½ cup croutons in each and top with grated cheese. Place under the grille until the cheese has melted and starts to bubble. Serve with crusty baguettes.
