A little something to begin proceedings is always needed if you are going to have an evening of protracted gastronomic delights. Some Entrées are traditional, others novel, some are individual, having no counterpart as a main course, others are tastings in small amounts of what otherwise might be a main course. On the the whole, they tend to be small, with relatively intense flavours that are complimented well by more intensely flavoured wines.
