Apple and Grain Salad

Ingredients.

½ cup Bulgar Wheat.

2 tsp Dijon mustard.

2 tsp balsamic vinegar.

2 tblsp olive oil.

Salt and pepper to taste.

2 spring onions, finely chopped.

100mm celery, finely chopped.

1 green apple [Granny Smith is good], cored and thinly sliced.

2 leaves lettuce, chopped.

Celery leaves, finely chopped.

Preparation.

Cover the Bulgar wheat with cold water and leave to soak for 20 minutes. Drain through muslin and squeeze out the excess water. Set aside. Beat the mustard, vinegar, oil, salt and pepper together in a small bowl until the mixture emulsifies. Set aside.

Method.

Toss the wheat grains, onions, celery, apple and lettuce together in a bowl. Add the mustard mixture and toss carefully until all the ingredients are evenly coated. Chill in the refrigerator for an hour or so, toss again and serve immediately.

Serves: 2.
