Fruit Cobbler.

Or Cherry Cobbler. Or Mandarin Cobbler.  Or Pear Cobbler. Or whatever you fancy, provided you have a can of it in the cupboard. Serve with whipped cream or ice cream.

Ingredients:

50g butter.

½ cup plain flour.

½ cup milk.

½ cup caster sugar.

1 teaspoon baking powder.

½ teaspoon vanilla extract.

Salt.

1 410g can mixed fruit, drained.

2 tablespoons raw sugar.

½ teaspoon cinnamon.

Method.

Heat oven to 200° C. Melt the butter and pour into a small baking dish. Beat together the flour, milk, caster sugar, baking powder, vanilla and salt. Spread the mixed fruit over the butter, then pour the batter over the fruit. Sprinkle with the raw sugar and cinnamon.

Bake for 30 minutes. The top should be browned and the cobbler should be coming away from the sides of the baking dish. Serve with whipped cream, ice cream, custard or whatever topping takes your fancy. Maple syrup is good, too.

 Serves 2-4.
