Lime and Sesame Beef Stir Fry

If you want a quick and easy stir fry, this is about as quick and easy as they make them. Provided that you can have your components sitting ready, you can put it all together in about twelve minutes. This is about the time it takes to bring a 1 ½ litre pot of cold water to the boil and cook a 200g pack of udon noodles.

 

Ingredients.

250g thinly sliced good beef steak, e.g. sirloin.

Zest of a lime.

1 small dried chilli, seeds removed, finely chopped.

2 cloves garlic, peeled, finely chopped.

1 tblsp soy sauce.

2 tblsp olive oil.

1 tblsp sesame oil.

2 tblsp cornflour.

1 tblsp oyster sauce.

Juice of a lime.

Salt to taste.

2 cups water.

1 cup broccoli florets.

1 spring onion, finely chopped.

1 cup chopped cabbage.

2 tsp sesame seeds.

 

Preparation.

Slice the meat finely across the grain and place in a small bowl. Mix the lime zest, chilli, garlic, soy sauce, olive oil and sesame oil together and add to the meat. Mix well, cover and leave to marinate for a couple of hours at least. Stir occasionally. Mix together the cornflour, oyster sauce, salt and water in another container and set aside. Mix the vegetables together in a bowl and set aside.

 

Method.

Place a sauté pan or wok on a high heat and stir fry the meat until cooked through [2-3 minutes]. Add the vegetables and stir fry for another 2-3 minutes. Add the cornflour mixture, stir well and bring to the boil. Reduce the heat and simmer for 3-4 minutes. Serve over udon or soba noodles, sprinkled with the sesame seeds. Serve  immediately.
