Lamb Mains.

The meat of choice throughout south Asia and the muslim societies across northern Africa and south-west Asia. It is a delicate meat that combines well with spices and fruits. Do not forget the other sheepmeats, hogget and mutton, both of which are invaluable. Mutton, an oft-neglected meat, is most excellent provided that you remember that it is not as delicate as lamb, and has to be cooked like beef. Goat meat, although much stronger in taste, is an interesting variation and may be substituted for lamb or mutton in all the recipes below.
