Chunky Apple and Fennel Sauce.


Juice and zest of a lemon.

2 tblsp raw sugar.

¼ tsp ground fennel.

Salt to taste.

2 tblsp water.

3 apples, peeled, cored and diced.


Mix the juice, zest, sugar, fennel, salt and water together in a small pan and add the apple. Place, covered, over a hot flame until bubbling then reduce heat and simmer for another 4-5 minutes. Keep warm until ready to serve.

Serves: 4.
