Yoghurt and Sumac Dressing

A deliciously light and tart combination to lighten up heavier dishes such as pilaffs, or to offset spicy dishes.

2 cups fresh yoghurt.
Juice and zest of 1 small lemon.
¼ cup chopped fresh mint leaves.
1 tsp sumac.

Beat all the ingredients together to ensure that they are thoroughly mix. Pour into an airtight container and leave in the refrigerator for at least an hour to let the flavours develop and combine.

Yields: 2 cups.
